Khuska rice

Plain khuska biryani

Khuska rice is also known as kuska, khushka, khusqa. This dish has came from south asia, mainly rice cooked with some particular spices usually serve with korma, saalan, curry or raita. In southern India khuska rice is very prevalent dish.



Ingredients:-

• 500 gm (1 glass) biryani rice (pre soaked for 30 mins)
• 1 tbsp ghee or oil
• 4 cloves
• 4 cardamom
•1/2 inch cinnamon stick
• 1 mace flower
• 1&1/2 tbsp ginger garlic paste
• 650 ml (2 glasses) water
• salt
• orange or saffron yellow food color
• kevda essence ,kevda itra or kevda water
• mint leaves and fried onions for garnishing

Method:-


Heat ghee/oil add cloves, cardamom, cinnamon, mace flower cook then 1 to 2 minutes in low flame, then add ginger garlic paste cook for 2  minutes.


Add water & salt.


Allow to simmer.


Add properly washed and soaked biryani rice, cook in full flame for 3 maximum minutes without lid.


Cover the rice and cook in low flame for 10 to 15 minutes.

When biryani rice is ready, in a small mixing bowl add 3 drops of orange food color and 4 drops of kevda itra or kevda essence dissolved with 1 tbsp of water. Then drip off this mixture on the khuska biryani and mix the khuska biryani with the help of stick .
Garnish with fried onion and mint leaves.

• If  you are using kevda water in that case add 1 tsp kevda water.
